Turkey Tetrazzini
INGREDIENTS:
3/4 lbs. mushrooms, sliced
3/4 cup plus 2 Tbs. butter
1/2 cup all-purpose flour
4 cups chicken broth
3 cups milk
1/2 cup dry sherry
1 2/3 cups Parmesan cheese,
grated
4 cups cubed cooked turkey
1 1/2 cup soft bread crumbs
1 package (16 oz.)
spaghetti, cooked
DIRECTIONS:
Sauté mushrooms in 1/4 cup of the
butter; stir into pasta. Melt 1/2
cup of the butter; stir in flour.
Stir in broth, milk and sherry.
Cook and stir until boiling. Add
1 1/3 cups of the cheese. Set aside
2 cups sauce. Mix pasta mixture,
turkey and remaining sauce in greased
casserole. Pour on reserved sauce.
Melt remaining butter; mix with
bread crumbs and remaining cheese.
Sprinkle on top. Bake at 350 degrees
for 1 hour.
