Sweet Potato Casserole
INGREDIENTS:
3 pounds sweet potatoes
1/2 cup butter or margarine
1/2 cup firmly packed,
brown sugar
1/4 cup sugar
2 teaspoons vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg,
(optional)
Marshmallows
DIRECTIONS:
Scrub sweet potatoes and cook in
boiling water covered for 40 to
50 minutes, or until fork-tender.
Drain and rinse under cold water
to stop cooking process; drain on
paper towels. Peel when cool enough
to handle; mash with butter. Beat
in next 5 ingredients with an
electric mixer (or by hand).
Spread in shallow greased 1-1/2
quart baking dish and bake in a
preheated 350 degree oven for 20
minutes. Cover with marshmallows;
bake 10 to 15 additional minutes
or until marshmallows are melted
and lightly browned.
Yield: 6 to 8 servings
