Linguine with Red Clam Sauce
INGREDIENTS:
1 onion, chopped
1 or 2 garlic cloves, minced
2 Tbs. olive oil
2 6 1/2-oz. cans minced clams, drained
1 6-oz. can tomato paste
1 can diced tomatoes
1/2 cup water
2 Tbs. lemon juice
1 Tbs. chopped fresh parsley
or 1/2 Tbs. dried
1 tsp. sugar
1/4 tsp. rosemary
1/4 tsp. ground thyme
8 oz. linguine or spaghetti,
cooked and drained
Grated Parmesan cheese
DIRECTIONS:
Sauté onion and garlic in oil in skillet.
Add clams and their juice, tomato paste,
diced tomatoes, water, lemon juice,
parsley, sugar, rosemary and thyme.
Simmer, uncovered, 15 to 20 minutes.
*Can substitute Italian seasoning for
rosemary and thyme.
