Pork Schnitzel

 
INGREDIENTS: 
1 pork tenderloin, about 1 pound
1/2 cup all-purpose flour
1 egg
3/4 cup seasoned bread crumbs
2 tablespoons oil
 
 
DIRECTIONS:
Cut the pork tenderloin crosswise into 8 pieces.
Place each slice between 2 sheets of plastic wrap
or waxed paper and gently pound pork with a flat
meat mallet or rolling pin until about 1/4 inch
thick. 

Place the egg in a a shallow bowl and beat.
Place the flour and bread crumbs on two separate
plates. 

Dip each pork piece in flour mixture to coat,
shaking off excess. Dip into egg, tapping off
excess and then dip in bread crumbs to coat. 

Heat oil in large skillet over medium-high heat
until hot. Add coated pork slices and cook about
3 minutes on each side, until golden.

Serve with lemon slices.

Yield: 4 servings
