Pesto Sauce
INGREDIENTS:
2 cups tightly packed basil leaves
2 garlic cloves, crushed
2 tablespoons pine nuts
1/2 cup olive oil
2/3 cup Parmesan cheese,
finely grated
Salt and pepper to taste
DIRECTIONS BY HAND:
Using a mortar and pestle, grind
the basil, garlic, pine nuts and
seasoning to a fine paste.
Transfer the mixture to a bowl and
whisk in the oil a little at a time.
Add the cheese and blend well.
Adjust the seasoning to taste.
DIRECTIONS BY MACHINE:
Place the basil, garlic, pine nuts
and seasoning in a food processor
and grind as finely as possible.
With the food processor on, slowly
add the oil in a thin stream to make
a smooth paste. Add the cheese and
pulse quickly 3-4 times. Adjust the
seasoning if necessary and heat gently.
Serve on your favorite pasta.
