Conchiglie Pasta Salad
INGREDIENTS:
1 large package sea shell macaroni
1 can small black olives, drained
1 small jar green olives, drained
1 package pepperoni, sliced
1 small red onion, sliced and halved
8 ounces Mozzarella cheese, cubed
Fresh grated Parmesan Cheese
1/4 cup oil
1/2 cup red wine vinegar
Italian seasoning, garlic, salt
and pepper, to taste.
DIRECTIONS:
Cook pasta, drain and cool. In large
bowl combine pasta, olives, pepperoni,
onion, cheese together. Toss in oil
and vinegar. Add herbs, salt and pepper
to taste. Sprinkle Parmesan on top.
*Use fresh herbs if desired
