German Apple Pancake 2
INGREDIENTS:
4 tablespoons butter
2 tart apples, peeled
and thinly sliced
Cinnamon sugar mixture,
(4 tablespoons sugar mixed
with 1 teaspoon cinnamon)
1 cup milk
1/3 cup granulated sugar
1/4 teaspoon salt
5 large eggs,(or 6 medium)
1 teaspoon vanilla extract
(optional)
1 cup all-purpose flour
2 tablespoons powdered sugar,
(optional)
DIRECTIONS:
Heat oven to 400 degrees. Heat a
large, oven-safe nonstick pan (a 12-inch
well seasoned cast iron skillet works well)
over medium heat. Melt the butter, sprinkle
with the cinnamon sugar; arrange apple slices
over sugar mixture in pan; Cook over medium
heat for 3-4 minutes. Remove pan from heat.
In bowl beat together eggs, milk, vanilla,
flour, salt and granulated sugar. Add the
flour, stirring with a whisk until blended.
Gently pour batter over apple slices. Bake
until golden brown and sides are puffy,
approximately 25 minutes.
Sprinkle with powdered sugar if desired and
serve warm with maple syrup.
Cut in wedges to serve.
