Chicken with Pineapple Sauce
INGREDIENTS:
1 Tablespoon butter
4 boneless, skinless chicken
breast halves
4 teaspoons cornstarch
1 Tablespoon brown sugar
1 pinch ginger (optional)
1/4 tsp. cinnamon
1 cup pineapple juice
1 Tablespoon lemon juice
1 1/2 - 2 cups bite-size
pineapple chunks
Rice (cook as directed on pkg.)
Green onions, chopped (optional)
DIRECTIONS:
Saute chicken in butter until done (grill
chicken if desired). Whisk together remaining
ingredients (except pineapple chunks) in a
small saucepan. Bring to a boil. Boil
approximately 1 minute (until sauce thickens).
Add pineapple chunks. Put chicken on a bed of
rice and top with sauce. Garnish with green
onion if desired.
*Taste sauce when done, add additional sugar
if needed (can use white sugar).
